Let’s Make an Autumn Breakfast
My kids go in random phases of their breakfast foods. One week they love eggs, the next week if I asked them to eat an egg you’d think I was telling them Christmas no longer exists.
Needless to say, this week, we’re on oats in the Metcalf home.
I stopped making oats for a while because I wanted to make sure we were hitting a higher protein intake for all of us each day. I saw a recipe that made a bowl of oats in the morning include a good amount of protein and healthy fats and now it’s back on the rotation!
Protein Oats with Cinnamon Apples
2 cups of organic, gluten free oatmeal, made however you typically cook them on the stove
Then, mix in:
1 scoop of protein powder (currently using an unflavored one from ancient nutrition. chocolate protein powder makes this recipe delicious too!)
2 tbsp of grass fed butter
A splash of whole milk
Sprinkle in cinnamon to taste
1-2 tbsp of maple syrup, depending on how sweet you want it
Now, for the apples
Chop and peel the skin off of 1-2 honey crisp apples (any kind will do, I love a tart apple with the sweet oats)
Warm some butter on the stove in a little skillet, add in the apples once the butter is melted
Add in a splash of maple syrup and cinnamon sprinkled on to taste
Let the apples cook for about 8-10 min while stirring occasionally
Plate your oats and scoop the warm apples on top and serve!
A wonderful bonus, your house will smell like fall 🍂




I fear I have the same breakfast experience as your kids….I get the egg ick so fast.
